Did I really just review sushi and fajitas on the same page? Ahh... the complexity that is this blog.
Again, limited to the Greater Salt Lake City area:
3. Demae (82 West Center St., Provo, UT): Pretty good. Nothing to write home about but if you go on a Tuesday night it is half off.
2. Ginsa (209 W 200 S, SLC, UT): The epitome of a hole in the wall. If someone hadn't taken me, I never would have gone. Sadly, this individual did not also pay seeing as the prices here about double that of most other places. The environment is that of too-cool to have customer service (or real restrooms) but the sushi is pretty amazing.
1. Samurai (6195 Highland Drive, SLC, UT): The smallest sushi place of the 3, but by far the best value/taste. I have been several times and never failed to be amazed. The tuna rolls are awesome. The customer service is suprisingly good.
Honorable mention: Asian Buffet (Draper, American Fork, etc) Not too bad really. Works great for those nights that my wife refuses to eat sushi since it has some more Americanized foods and its pretty cheap. If you absolutely need sushi and can't spend some hard earned money, this will work to quell your appetite until the next visit to the Samurai.
Dishonorable mention: Osaka (Provo, I won't give you the directions so you don't accidently go there.) Worst sushi I've ever had, and I even tried Costco sushi once. The atmosphere is great, and they are very nice, but do not order the sushi. I highly recommend the place, but I highly recommend getting anything but sushi there.

The best sushi in the world can be found in Japan. Japanese food always tastes better over there, and nothing beats sushi when the fish is really fresh, which is difficult to find in land-locked Utah.
As to the best sushi in Utah, have you ever eaten Sushi at Beni Hana in Salt Lake? Give it a try, it has my vote for #1.
I have not, but I did have some great sushi recently at Tepanyaki in Lehi. Beni Hana will have to be next on my list.
Have any of you been to Happy Sumo? That's good stuff, though it is a little on the pricey side (about $11 bucks for a specialty roll). I love it, though.
Funny you mentioned the sushi at Asian Buffet in American Fork, because I just had some there and was underwhelmed. Maybe you got a different chef or something.
Have any of you tried Ichiban in SLC? I've never been there, but I've been curious about that place.
I have not been to the Happy Sumo, add that to the list as well. I go with some friends every month or every other month and we are halfway through a tour of Utah.
The Asian Buffet is at best a McDonalds equivalent of a hamburger. Some days are better than others but never REALLY good.
My wife & I have been going to Osaka since 1995 & the sushi & food is great (we have eaten at the other places you mentioned including many in California - Tsunami in Montecito is great also but Osaka is right at the top - only in S.F. can you find better sushi). Also, check the endorsements on their wall behind the cash register and see many former BYU players incuding Steve Young. Justin Luettgerodt used to eat $30+ of sushi at a time! Finally, there ain't any better people on this earth than the owners, Frank and Nancy Lin!
I gave Osaka another try, mostly because we loved everything else there. The sushi was much, much better this time. It probably doesn't belong as a "dishonorable" mention any more, but that one experience will always make me hesitant to buy it there again.
Sorry, I am going to have to agree with the initial comments on Osaka. I am not a fan of their sushi or their other offerings. Too many bad experiences.
One more thing, I have to give props to Demae for their rolls. Their Hana roll has to be one of teh best that I have ever had...this includes any such rolls that I have had in Japan (which are few and far between due to the fact that they are not really something that you see in Japan).
